Little Sweetness with Sweet Potato

Last weekend our helper returned from her month-long vacation in her province. Being a thoughtful person that she is, every time she come back from her vacation she always bring with her produce from their farm, whatever is in season. This time she returned with a bag-full of sweet potatoes.

Most of you might agree that sweet potatoes aren’t the tastiest on its own. Most people here often cook it with brown sugar, camote-cue as it is called. But we wanted to make a twist on this popular snack. So Gepoy rummage the fridge for anything that might work with sweet potatoes. He found tomatoes, cabbage, red bell peppers & Caesar salad dressing there so he thought of making a salad with that. Here’s what we’ve come up with. Sweet Potato Chips and Cabbage Salad


Yummy, right? It's so yummy that my brother who doesn't eat veggies grabbed seconds.

Here’s  how:

Sweet potato: First, slice the sweet potato into thin chips. You can add seasoning to the chips before frying, if you like. Ours was unseasoned. As for the salad part; julienne your cabbage & red bell pepper and dice your tomatoes. Season your salad with salt & pepper. Toss in your dressing, you can use any dressing you like. For the meat sauce, First, I sautéed finely chopped onions & garlic.

Tip: Saute first your onions add a pinch of salt to release its flavour, when the onions are transparent add in your garlic       

Add in ¼ kg ground pork/beef. When the meat is done add about 4-5 tbsp of tomato sauce (just enough to coat your meat). Add some hot sauce (depends on your preference). Add salt & pepper to taste.   

Pour over your salad and meat sauce over your chips. Enjoy!
